AC-100FG is a food-grade cellulase enzyme produced from strains of Trichoderma reesei through submerged fermentation, extraction and refining process. It contains endoglucanase, CellobiohydrolaseⅡ and β-glucosidase, which can cleave β-1, 4 bonds of the cellulose molecules, decompose cellulose and release oligosaccharides and glucose.

Use of AC-100FG in juice processing can help to decompose cellulosic materials so as to increase juice yield and improve clarification of the finished products.

Use of AC-100FG in alcohol and brewing can help to decompose the cellulose contained the raw materials into sugars, thus increase the wine yield and maximize the utilization of starch.

PRODUCT CHARACTERISTICS

Effect Of pH: AC-100FG can work at pH from 4.0 to 6.0 with its optimum pH from 4.5 to 5.0.

Effect Of Temperature: AC-100FG can work at 30-60°C with its optimum temperature from 50-55°C.

Inactivation: AC-100FG can be inactivated by increasing pH to 9 or heat it to 80°C and keep for 10 minutes.

Packaging: 25kg, 30kg HDPE drums or 1125kg IBC totes. Customized packaging is available upon request.

Shelf-life: 6 months if this product is stored below 25°C in its original packaging, sealed and unopened, protected from direct sunlight. Its shelf-life will be eighteen months if it is stored properly at 0∼10°C. AC-100FG has been formulated for optimal stability. Prolonged storage and/or adverse conditions such as higher temperatures may lead to a higher dosage requirement, and should be avoided.

  • Fruit and vegetable juice processing

Most fruit and vegetable materials contain cellulose in various degrees. Use of AC-100FG in fruit and vegetable processing can help to soften plant tissue, improve taste and simplify process.

In juice processing, AC-100FG can help to increase juice yield and improve clarification of the finished products. In the preparation of dehydrated vegetables such as carrots, potatoes, etc., use of AC-100FG during the pre-treatment can improve the cooking and recovery properties of the finished products.

Recommended dosage of AC-100FG for fruit and vegetable processing is 0.05∼0.4L per ton of fruit pulps, keeping at appropriate temperature and pH for 1∼5 hours.

  • Alcohol and brewing

In alcohol and brewing, use of AC-100FG can help to decompose the cellulose contained the raw materials into sugars, promote the release of cell contents, and thus increase the wine yield. It can also improve the utilization of starch.

Recommended dosage of AC-100FG for alcohol and brewing is 0.15∼0.25kg per ton of raw materials.
