In addition, ascorbic acid prevents the oxidation reaction of polyphenol compounds to form new compounds that cause the darkening of vegetables and fruits, because it creates a low pH environment that slows down the rate of oxidation reactions that cause darkening, inhibiting redox enzyme activity.
