MONOSODIUM GLUTAMATE (MSG) – MSG is the sodium salt of glutamic acid, one of the most abundant non-essential amino acids in nature.
The product is in the form of a white, odorless crystalline powder and when dissolved, it will yield glutamate and sodium. It is readily soluble in water but is not hygroscopic and is practically insoluble in common organic solvents such as ether. In general, MSG is stable under normal food processing conditions. During cooking, MSG does not decompose, but like other amino acids, at high temperatures it can brown or the Maillard reaction can occur in the presence of sugar at very high temperatures.
