1. What is Sodium Benzoate?

Sodium Benzoate (or Natri Benzoate) with the chemical formula NaC₆H₅CO₂, designated as E211, is the sodium salt of benzoic acid. It exists in the form of white powder or granules, is soluble in water, odorless, tasteless, and is one of the 29 food additives used. Sodium Benzoate is produced through the reaction between sodium hydroxide and benzoic acid.

2. Applications of Sodium Benzoate in Food Industry

Due to its mold-permeating properties, cell-acidification, and inhibition of respiratory enzyme activity in bacterial cells, Sodium Benzoate is used in concentrations sufficient to preserve various products by preventing bacterial growth, fermentation, mold development, inhibiting oxidation processes. It decomposes without toxicity, causing no allergies or pollution to humans, animals, and the environment. It finds wide application in preserving grains, food, pharmaceuticals, cosmetics, and other consumer goods (rubber, plastics, wood, etc.).

Sodium benzoate is most widely used in acidic foods such as salad dressings (vinegar), carbonated beverages (carbonic acid), jams, and fruit juices (citric acid), pickles (vinegar), and spices.

It is also used as a preservative in medicines and cosmetics and as a food supplement.

3. Is Sodium Benzoate Harmful to Health?

According to regulations in Vietnam, the permissible content of Sodium Benzoate as a food preservative is below 0.05% or below 0.2% by weight, depending on the type of product.

Sodium benzoate is considered safe for human consumption if the intake is below 5 mg/kg body weight per day. At this level, the acceptable daily intake (ADI) is established, defining the quantity of a specific substance that a person can consume daily throughout their life without any health risk.
