BAA-0100S is derived from the non-genetically modified strain Bacillus subtilis. BAA-0100S is an endo-amylase, it can quickly reduce the viscosity of starch gelatinization products, by randomly hydrolyzing starch, glycogen, and its decomposition products contained in the glucosidic bond alpha-1,4 to produce soluble dextrins and oligosaccharides.

Impact of pH on BAA-0100S:
- BAA-0100S is active with a pH range of 6.0 ~ 7.0
- The optimal pH of BAA-0100S is 6.0 ~ 6.5.
- BAA-0100S can be rapidly inactivated when pH is below 5.0
Impact of temperature on BAA-0100S:
BAA-0100S operates at temperatures below 60°C and the optimal temperature range of BAA-0100S is from 60 to 70°C. In the temperature range from 70 to 90 °C, the reaction process occurs rapidly with increasing temperature, besides, the inactivation of BAA-0100S also occurs faster.
Impact of calcium on BAA-0100S:
The presence of calcium (Ca) ions plays a protective role in the stability of the enzyme. The activity of BAA-0100S can disappear completely without calcium ions. The pH range of BAA-0100S can be expanded by adding calcium ions to an appropriate concentration. Normally, using 150 ppm calcium (in dry solid form) is enough to ensure the stability of BAA-0100S.
Storage conditions and shelf life:

- Shelf life is 6 months if this product is stored below 25°C in its
- original packaging, sealed and unopened, away from direct sunlight. Shelf life will be longer if stored properly at 0 ∼ 10 ° C
