- What is Protease?
Protease is an enzyme (catalyst for all biological reactions) that hydrolyzes proteins into peptides or amino acids.
– Proteases are present naturally in all living organisms such as microorganisms, plants, animals, and humans. Currently, protease is produced from a variety of animal, plant, and microbial sources, and depending on the source of extraction, it will have different properties and uses.
– Enzymatic protein hydrolysis is a method used to process animal by-products or add to animal feed to increase animal performance, reduce costs, and limit environmental pollution.

- Application of Protease in the animal feed and aquaculture industry
– Protein consists of long chains of polypeptides, a polypeptide chain containing amino acids.
– In order for the body to absorb nutrients and perform necessary functions, protein needs to be hydrolyzed into smaller units such as peptides or amino acids because:
+ Peptides have both nutritional and physiological functions or regulatory functions in animals. Some peptides from plant and animal sources also have anti-microbial, antioxidant, anti-hypertensive, and immunological effects. Peptide is also considered a biologically active substance.
+ Amino acid is the last element that plays many important roles in the growth and development of animals and is the premise of many biochemical reactions in the body.
Protease is a protein hydrolytic enzyme, it can split proteins into specific peptides and amino acids or remove unwanted peptides and amino acids.
Hydrolyzed vegetable proteins can replace some, or even most, fishmeal in aquaculture because of the global fishmeal shortage.
